And one more for today - the sauce is the winner in this one, you just need to track down the curry paste. I made a bit more sauce then what's called for the last time I made it.
If you don't have rice flour - corn starch will do. I've done alternate veggie, I think the peanut/onion topping is a definite plus, but could be optional.
Here's another favorite of mine. But again - blue apron makes it easy especially with their spice blends.
I attached the recipe for their Mexican spice blend which is great on a lot of things.
The cilantro sauce it a pain also - but again - it's a nice condiment for tacos and stuff as well:
Makes ¼ cup
Combine all ingredients in a blender or small food processor and blend until smooth. Add more water, lime juice, salt or pepper to taste. After it’s blended, measure your sauce. If it makes slightly more than ¼ cup, save the remainder in a sealed container in the fridge for up to three days.

Thought I'd share a few recipes that I picked up from Blue Apron. They have great recipes. Probably the biggest plus about them is that they send really good ingredients at there's little waste.
Trickiest part if you try them on your own is that there are a lot of ingredients so it can be challenging to have them all in stock.
Here's one of the simpler ones - I've substituted bacon for the prosciutto and it's works great as well.
